2 lb ground turkey
1 T olive oil
1 medium zucchini, grated
1 carrot, grated
1 onion, chopped
1 red pepper, chopped
2/3 c whole wheat couscous, uncooked
1 T Worchestershire sauce
1 1/2 t tomato paste
2/3 c InstaBroth, chicken flavor
Saute vegetables in olive oil over medium heat until onions are translucent. Add Worcestershire sauce, InstaBroth and tomato paste. Mix until tomato paste is incorporated. Set aside.
Combine ground turkey, couscous and egg in large bowl. Add onion mixture. Mix just to combine. Fill mini loaf pans almost to top. Makes 4 – 5 mini loaves. Bake at 350 for 30 minutes or until internal temperature is 165.
