Muffin in a Mug

We’re ready for back to school, on the run, off to work with a collagen protein muffin in a mug that takes about 4 minutes to pull together – in the microwave!

Dry Ingredients:
1/4 flour (coconut flour, oat flour…)
1 scoop Protein Essentials Collagen
1/2 t baking powder
1 t cinnamon
1/8 t maca
1 t chia seeds
1 t Linwoods Ground Flax, Sunflower & Pumpkin Seed Mix
2 packets of Stevia
pinch of salt

Whisk together in microwavable coffee mug. Set aside.

Wet Ingredients:
1/2 mashed banana
2 T grated zucchini
1 t olive oil
1 t vanilla

Mix together until combined. Add in the dry ingredients from the coffee mug. Mix just until combined. Scoop back into coffee mug.

Overnight Brown Rice

Overnight Brown Rice is a delicious alternative to oatmeal – plus it’s the perfect use of leftover rice! The nutty, creamy texture has a slight al dente bite. A scoop of Protein Essentials Collagen will give you a protein pump and help you feel full longer! You’ll want to try this gluten and dairy free on the go breakfast.

In a container with a lid – a mason jar works great combine the following ingredients:
1 1/2 c cooked brown rice
1 scoop Protein Essentials Collagen
1/2 c almond milk
1 capful of vanilla
Sprinkle of cinnamon
Stir, cover and refrigerate overnight. In the morning stir and add toppings like sliced banana, pomegranate seeds, chopped apple, chopped nuts….
You can also heat it up if you prefer a warm breakfast (or lunch)Brown Rice Overnight Oats. Enjoy!

Tasty Tumeric Collagen Drink

Tumeric is a powerful ancient spice that boasts a number of health benefits due to its strong anti-oxidant and anti-infammatory properties. Combine tumeric with Protein Essentials Collagen Peptides for a powerful punch. This tasty tumeric infused morning blend will help you face whatever the day may bring!

1 cup of almond milk
1/2 an apple
2 scoops Protein Essentials Collagen Peptides
1/2 teaspoon tumeric
1/4 teaspoon each ginger cardamon, and cinnamon
1 teaspoon raw honey
a tiny pinch of salt
Add all the ingredients to a blender. Blend until desired consistency is achieved. Enjoy!

This is a delicious healthy treat! The warmth from the cinnamon and the heat from the spice combined with the mocha hit the perfect flavor note.

1 1/2 c almond milk
1/2 small banana, frozen
small handful of spinach, kale, chard
heaping scoop of Protein Essentials Mocha Collagen Protein Shake
1/2 t cinnamon
1/8 chipotle chili pepper

Add the ingredients to your blender and blend until smooth. Add ice to a glass and pour shake over ice. Enjoy!

Easy Baked Apples Two Ways

Use this baked apple dish as a seasonal weeknight side dish, then use any leftovers as a healthy warm autumnal dessert.

3 medium apples, peeled and diced
1/4 c Protein Essentials Hydrolyzed Collagen
Juice of 1 lemon
2 t cinnamon
tiny pinch of salt

Mix all the ingredients together, the cinnamon should coat each apple dice. Pour into a baking dish and bake for 15-20 minutes at 350. Easy, healthy side dish!

The next night, add this healthy oat topping to leftover baked apples. You can put the leftover apples into a smaller baking dish or individual ramekins.

1/2 c oats
1/4 c almond meal
2 T coconut sugar
2 T softened coconut butter
tiny pinch of salt

Add the topping ingredients to a small bowl. Use a pastry knife or two forks to combine the ingredients. Cover the apples with the oat mixture. Bake for 15-20 minutes at 350. You could even add ice-cream or whipped topping and a dusting of cinnamon or chocolate. Enjoy!


Applesauce with Cranberries

The flavors of apples and cranberries marry well together; they are both sweet and tart. The cranberry is slightly sweeter and tarter than the apple, and the cranberry has a nice depth of flavor that lifts the apple. Addditionally, less added sugar is necessary due to the natural sweetness of the cranberry. Cranberries are one of the top antioxidant-rich foods, packing in more antioxidants ounce-for-ounce than other superfoods like spinach, blueberries, or even green tea. Apples are a great source of the fiber pectin; one apple has five grams of fiber. Apples are also packed with vitamin C.

This applesauce recipe allows you to adjust to your taste. If you like your applesauce smooth, pop it in the Vitamix. If you prefer a chunkier applesauce, use an immersion blender. You can also add more or less sugar, according to your sweet tooth.

1 c cranberries, frozen or thawed
4 apples, peeled and chopped
1 t cinnamon
1 – 2 T brown sugar
1/4 – 1/2 t nutmeg
cinnamon sticks
pinch of kosher salt
1 scoop Protein Essentials Hydrolyzed Collagen

Put everything in a heavy saucepan over medium heat. Bring to boil, reduce to simmer. Simmer until cranberries have popped and apples are soft. Stirring occasionally. Turn off heat. Remove cinnamon sticks. Use immersion stick to blend to desired consistency.
